    Brie Cheese & Sun Dried Tomatoes

    Brie Cheese Appetizer

    This Brie Cheese appetizer is a beautiful dip introduced to us by our good friends, Joe and Cindy.

    A few years back Joe and Cindy stayed with us in Italy for 6 weeks.  I was worried that maybe our friendship wouldn't survive a 6-week visit, but I need not have worried -- Joe and Cindy were the PERFECT house guests, and all of us were sad to see them leave.

    Picture this -- every day Jeff and I were greeted with an appetizer and glass of wine upon our arrival after work.  Heaven!  We were treated to so many tasty home-cooked dinners and stories of their daily adventures during those 6 weeks.  We're trying to convince them to visit us again!

    Aside from the amazing combination of flavors and textures, what I like about this dish is how quickly it comes together.  I can prep it 95% in advance.  Once my guests arrive, I place it in the microwave until the cheese melts and serve it with sliced baguettes.

    Brie Cheese and Sun Dried Tomatoes

    Brie Cheese and Sun Dried Tomatoes
    Prep time 5 minutes
    Cook time 18 minutes
    Total time 23 minutes
    Meal type Appetizer
    Brie Cheese melted with sun dried tomatoes and roasted red peppers then seasoned with garlic, balsamic and capers. Delicious spooned on top of sliced baguettes.

    Ingredients

    • 2 Wedges Brie cheese
    • ½ cup olive oil
    • 3 Cloves garlic (thinly sliced)
    • ½ cup sun dried tomatoes in oil (chopped)
    • 1 jar roasted red peppers (chopped)
    • 3 Tablespoons balsamic vinegar
    • 1 teaspoon capers (rinsed)

    Directions

    Step 1
    Saute garlic in olive oil over medium heat.
    Step 2
    Add tomatoes, red peppers, balsamic and capers. Simmer for 15 minutes.
    Step 3
    Place Brie Cheese in serving dish. Pour tomato mixture over Brie Cheese and cook in microwave until Brie is soft. Serve with sliced baguettes.
