Cinnamon Sugar Biscotti

This recipe was given to me by a friend of a friend way back in 1999 — just before our first move to Italy.

They are really quite simple to make.  I like them because they aren’t too sweet.  A great accompaniment to your morning or afternoon coffee.

Cinnamon Sugar Biscotti

Ingredients

  • 3/4 Cup vegetable oil
  • 1 Cup sugar
  • 3 Large eggs
  • 1 Teaspoon vanilla extract
  • 3 Cups flour
  • 1 Teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 Teaspoon salt
  • 1 Cup walnuts or pecans (ground fine)
  • 1/4 Cup sugar
  • 1 Teaspoon cinnamon

Directions

Step 1
In large bowl, beat together oil and sugar.
Step 2
Add eggs and vanilla.
Step 3
In medium bowl, sift together flour, baking powder, baking soda and salt. Add nuts.
Step 4
Add flour mixture to egg mixture and mix until incorporated. The dough will be heavy and sticky.
Step 5
Wet your hands with water to prevent dough from sticking. Divide dough into thirds and role each into one-inch thin rolls.
Step 6
Place rolls on lightly greased cookie sheets (I use Pam cooking spray).
Step 7
Mix together sugar and cinnamon. Sprinkle on tops of rolls.
Step 8
Bake at 350ºF for 30 minutes or until lightly browned.
Step 9
Remove from oven. While still warm and on cookie sheet, slice rolls into 1/2 inch pieces.
Step 10
Place slices cut side up on cooking sheet. Return to oven and bake another 5 minutes on each side.
Step 11
Remove and cool on racks.
