    Easy Shrimp Fajitas - straight from oven to table in no time flat!

    Fajitas for everyone!

    Shrimp fajitas is a brilliant meal.

    The shrimp and veggies cook together in the oven in no time flat.

    Shrimp fajitas - a brilliant meal that can be cooked in the oven. Super simple.

    It's easy to serve shrimp fajitas family-style --

    The pan goes straight from oven to table.

    Alternatively, shrimp fajitas can be cooked in a skillet over medium-high heat.  Whatever you prefer.

    Personally, I like the idea of cooking the fajitas on a sheet pan in the oven because that gives me time to square away the kitchen, set the table and pour myself a margarita.

    We all have priorities!

    I have a great cast iron griddle/grill that I used {affiliate link}.  I placed it in the oven as it was preheating.  When I placed the shrimp and veggies on it, I got that fantastic "sizzle" sound.  It was lovely.

    Divide the fajitas among taco-size flour tortillas, spoon a little salsa over the top and there you go!

    You won’t even miss the cheese – trust me.

    We were able to make 12 decent sized shrimp fajitas tacos out of this recipe.

    Shrimp fajitas tacos is a brilliant meal -- as perfect for hectic weekday meals as they are for leisurely weekend meals.
    If you want to stretch it a little further, you can add a bit more bell pepper or onion.

    Because Jeff isn’t big on bell peppers or onions, his tacos consisted of . . . shrimp!

    Of course, the shrimp had the benefit of soaking up all the amazing flavor from the peppers and onions . . .

    I stole a few of those tender shrimps from Jeff so I could enjoy along with the veggies.

    But once the shrimp were gone, I filled the tortilla with the remaining vegetables and was super satisfied with the outcome.

    It’s the seasoning!

    So simple -- just a little garlic, cumin, black pepper and lime juice.

    The cooking time is going to vary depending on the size of the shrimp you use as well a how soft/charred you want your peppers and onions to be.

    If you prefer your vegetables on the well-done side . . .

    I recommend you let them cook a bit before adding the shrimp to the pan.

    The shrimp should take between 10 and 15 minutes in a 400° oven so add them 10-15 minutes before your veggies are done to your preference.

    Easy Shrimp Fajitas

    Ingredients

    • ¼ cup olive oil
    • 2 limes, juiced
    • 1 teaspoon cumin
    • 1 teaspoon black pepper
    • 2 teaspoons crushed garlic
    • 1 package (20 ounces) shrimp (51-60 per pound)
    • 1 large red bell pepper, thinly sliced
    • 1 large yellow bell pepper, thinly sliced
    • ½ medium onion, thinly sliced
    • Chopped fresh cilantro for garnish (optional)

    Instructions

    • Whisk together olive oil, lime juice and seasonings. Set aside.
    • Place shrimp and sliced vegetables in large bowl.
    • Pour marinade over all and place in fridge for 15-30 minutes.
    • While shrimp and vegetables are marinating, heat oven to 400.
    • Pour fajitas onto a large, shallow baking pan and place in the oven until shrimp are cooked (approx. 15 to 20 minutes – depending on the size of the shrimp).
    • Keep an eye on the shrimp so they don’t overcook. They are done when the shrimp are pink.

    Notes

    Serve in small flour tortillas with salsa.

    This makes 12 satisfying tacos.

    Reheating the fajitas is simple. Heat a non-stick skillet over medium-high heat, toss in the fajitas and stir quickly until heated through.
