Inspire Me Mondays #42
Am I the only one ready for a break from the heat???!
We’re having quite the heatwave here, but I think I see the light at the end of the tunnel.

I want to start this Inspire Me Monday post off by sharing one of my favorite breakfast sandwiches with you.
Super simple. I just call it a Breakfast Bagel Sandwich.
Start with your favorite savory bagel.
Toast to your liking (I like my toast crunchy!).
Spread some cream cheese.
Next comes a few slices of tomatoes (season with salt and pepper).
Finish with a couple slices of bacon.
This is a seriously good bagel sandwich.
I hope you try it.

I have a dear friend I worked with many years ago. One day at work she mentioned she had fed her daughter a popsicle and toast for breakfast.
I had to laugh a little when she confided that to me, but I totally understood the concept of doing whatever it took to get everyone off to school/daycare, etc. so you can make it to work on time.
This recipe for breakfast popsicles is a nice, healthy, guilt-free breakfast option!
