Welcome to Inspire Me Mondays!
We spent the last week in my beautiful hometown of San Diego and we’re currently on the road heading to Colorado Springs . . . by way of Lake Tahoe . . . in a Ford Fiesta. . .
Four adults (one of whom is 6’7″), three full-sized suitcases, one duffel bag, one well-equipped camera bag, and an abundance of personality and opinions . . .
The first leg of this journey took us to Lake Tahoe where we dropped Jackie and her boyfriend, Christian, off.
By the time we reached Lake Tahoe, we had endured enjoyed 12 hours of coziness.
Did I mention an abundance of personality and opinions???
Jeff and I are now continuing on to Colorado Springs and expect to arrive later today.
We dined at some amazing restaurants while in San Diego.
My favorites were Puesto near Seaport Village and The Gaslamp District, Shades in Ocean Beach and Herringbone in La Jolla.
We attended my niece’s wedding at the Bali Hai on Shelter Island, which is where Jeff and I had our wedding way back in 1991.
Lanna’s and Hunter’s wedding was beautiful and SO much fun. I haven’t danced that much in years!
Sweet memories.
I have to hand it to my daughters for their taste in men. Men who know how to cook!
Alyssa’s husband, Zach, taught us how to cook this tasty Tortilla de Patata. If you haven’t tried it yet, you’re missing out!
This past week Christian dazzled us with his crepe-flipping skills while he cooked his mom’s recipe for crepes.
Christian and his family are from Denmark so these crepes are the real Danish deal.
I’m working on a full post for these beauties, but here’s a little teaser.
They. Were. So. Good!
