I was determined to hammer out this low carb jalapeno popper chicken after chatting with my friend, Kristy . . .

Kristy told me she needed low-carb snacks and dinner ideas that didn’t take forever to make . . . and that didn’t include cauliflower or shrimp.

A reasonable request.

Kristy just started a new job — on top of being a mom to an energetic 3 year old, wife to a military man and doggie mamma to a gigantic, lovable Golden Retriever.

She doesn’t have the luxury of time when it comes to getting dinner on the table, sooooo

Challenge accepted!

I started by testing out a recipe I found at Aunt Bee’s Recipes.  It was delicious but I had to make a few changes — fresh jalapenos make a world of difference.

I also changed the cooking technique for the chicken.

This dish is low-carb comfort food!  And it doesn’t take long to make at all!

One of the extra benefits is that while it’s baking I have time to tidy the kitchen, set the table . . .

. . . and pour a glass of wine.

If you’re cooking for someone who doesn’t appreciate the low-carb aspect of this dish, whip a handful of tortilla chips at them to crumble over the top.

Problem solved!

I’m loving Polish pottery at the moment. I have a few pieces (thank you, Alyssa and Jackie!).  I get them here in Italy for a semi-decent price, but I’ve found much more affordable options on Amazon.  There are several to choose from, but I think this Polish Pottery Baker is gorgeous. Low Carb Jalapeno Popper Chicken Skillet

Low Carb Jalapeno Popper Chicken Skillet

This low-carb jalapeno popper chicken skillet is easy and fast. For easy clean up, multi-task by using one ovenproof skillet to cook bacon, saute chicken and to bake the entire assembled dish. Low carb never tasted so good!

Ingredients

  • 5 Slices bacon, cooked crisp and chopped
  • 4-6 boneless chicken breasts, trimmed of excess fat (If thick, flatten a bit with mallet)
  • 1-2 Tablespoons olive oil
  • 8 Ounce package cream cheese, softened
  • 1/4 Cup mayo
  • 1/2 Teaspoon garlic powder
  • 1 Cup shredded cheddar cheese
  • 1/4 Cup grated parmesan cheese
  • 4-6 fresh jalapeno peppers, finely chopped (seeds and ribs removed)
  • cilantro sprigs for garnish

Note

Low Carb Jalapeno Popper Skillet evolved from Aunt Bee's Recipes' similarly named dish.

I've made a few changes to suit our tastes and cooking style.  Streamline clean-up by using a cast iron skillet -- cook the bacon, the chicken, saute the jalapenos and then heat the entire assembled dish.  I even bring it to the table in the cast iron skillet.  Easy!

Directions

Step 1
Preheat oven to 350ºF.

Cook bacon to crispy, set aside.

Season chicken breasts with a little salt and pepper and cook over medium-high heat either in the same pan you used for the bacon (pour off all but 1 Tablespoon of grease) or use a different skillet and add about a tablespoon of olive oil.

Depending on the size of the breasts, cook each side 3-4 minutes, or until juices run clear.

While chicken is cooking, remove seeds/ribs from jalapenos. Chop peppers finely.

Once chicken is done, move to plate and set aside.

Add chopped jalapenos to pan and saute briefly. Turn off heat.

In medium bowl, mix cream cheese, mayo, a little salt and pepper to taste, garlic powder.

Add cheddar and parmesan cheeses (I reserve a little for topping before baking), sauteed jalapenos, crumbled bacon.

Place chicken back into skillet (or other ovenproof dish), top with cream cheese mixture, sprinkle a little additional cheddar and parmesan if desired.

Bake in oven until well heated (about 20 minutes).

    Just made this for my family, and we all LOVED it. Using 4 chicken breasts and just 2 jalapeños, the heat was minimal enough that even my 3 and 5 year old could (and did) eat every bite! Thank you! So delicious!

      The nutrition information is going to vary greatly depending on size of chicken breasts, for example. There are many variables in products such as bacon, cream cheese, cheddar, etc. I recommend using one of the many online nutrition calculators once you have all your ingredients in front of you. Depending on your nutrition needs, you can vary this recipe to suit your needs. For example, you can use low-fat cheeses, leaner bacon, less chicken, etc. This is a delicious recipe -- I hope you can find a way to make it work.     When I served this for dinner tonight the family said, "oh! we liked this the last time you made this." I didn't even remember having made it before but I will definitely remember to make it again--it's a really easy dish to prepare and is really delicious!

    Ok I know this is a weird question but am I adding the shredded cheese, Parmesan, bacon and jalapeños with the cream cheese mixture? Doesn't specify what to add it to, I am just double checking, I want to get the recipe accurate.

      Great question. I think there are several variables that would affect this recipe. For example, size of chicken breast, amount of bacon, calorie content of the particular brand of cream cheese used, etc. You're probably going to get the most accurate nutritional info if you calculate it yourself using the nutritional values of the particular products used. The USDA Foods List has a search function allowing you to find the nutritional info on a wide variety of foods.
