    Mini Pizza Cups

    Jeff is a huge fan of Totino's Pizza Rolls.

    The first time he cooked dinner for me, Totino's Pizza Rolls made up the main course.  Side dishes on that very romantic evening included Pillsbury biscuits and corn.  Hmmmmm.

    . . . and he's allllll mine, ladies!

    I saw a similar recipe for these Mini Pizza Cups on The Recipe Rebel and knew I had to give them a try to see if they passed the "Jeff Test."

    He loved them, but mentioned the crunchy corners meant he couldn't pop them in his mouth as quickly as he could pop Totino's pizza rolls.

    It's all good -- I think slowing down and savoring these Mini Pizza Cups is a good thing.

    I bet these would also be good filled with roast beef and a horseradish sauce, or maybe tuna and cheddar cheese or even diced green chilies and jack cheese.

    The combinations are endless!

    I'm making a note to revisit these in 2015 and come up with more combos!

    Slightly adapted from recipe on The Recipe Rebel
    These mini pizza cups are a delicious and striking appetizer. Easy to assemble ahead of time and pop into the oven when your guests arrive!

    Ingredients

    • 24 Wonton wrappers
    • 1 Cup Tomato sauce (I recommend an authentic Italian brand, or homemade)
    • 3 Tablespoons Olive oil
    • 24 Slices Pepperoni (quartered)
    • 1 Cup Mozzarella (shredded)
    • ½ Cup Sliced black olives

    Note

    Use your imagination when filling these pizza cups -- sausage, olives, green peppers, etc.  Anything that can go on a pizza can go into these cups!

    Directions

    Pre-cook pizza shells
    Step 1
    Heat oven to 350ºF. Place a wonton wrapper into each muffin tin on a mini muffin pan. Bake in oven until wonton wrappers are just beginning to brown. Remove from oven.
    Prepare sauce
    Step 2
    Mix tomato sauce and olive oil. Heat through.
    Assemble pizza cups
    Step 3
    Place 4 quarters of pepperoni into each shell. Add 1 teaspoon of sauce and top with shredded mozzarella and olives
    Bake
    Step 4
    Place mini muffin pan into oven. Bake until cheese is melted and sauce is heated through (approximately 10 minutes).
    Eat!
    Step 5
    Remove from oven and enjoy. Careful -- these little cups of heaven are hot!
