There's a really tiny restaurant Jeff and I go to from time to time.
It's called "Non Solo Polli" (not only chickens).
The front of the building is a walk-up rotisserie chicken place.
By the way, the Italians make amazing rotisserie chicken. I will probably never try to re-create their rotisserie chickens. I'm positive my attempts won't achieve the deliciousness level of their chickens. More importantly, I have no desire to splatter my oven with chicken grease when I can walk up the street and buy one of those beauties for 7 euros.
So the backside of this rotisserie chicken place houses the cozy, tiny restaurant. We love it.
On our most recent visit, I ordered the "Pasta Non Solo Polli" and ate every last bite. I could not wait to to re-create it at home.
This Pasta with Sausage is a dish that looks fancy, but is very simple and takes only a few minutes to throw together. I think there's probably room for some mushrooms in this dish, but I wanted to keep it simple.
Here you go -- sausage, cream, parmesan and arugula!

Ingredients
- 1 Pound Italian sausage, casings removed (My family prefers the flavor of spicy Italian sausage)
- 2-½ Cups heavy cream
- 1 cup parmesan
- 3 Generous handfuls fresh arugula
- 1 Pound dried pasta, cooked to al dente
- salt and pepper to taste

I tried this Pasta with Sausage and Arugula for the first time at a tiny restaurant near our house. The bold flavors of the spicy Italian sausage and arugula are all the seasonings you need for this dish. I prefer a pasta called "Casarecce," but any pasta of your choosing will work. I think you'll like this and hope you make Pasta with Sausage and Arugula a frequent star at your dinner table.

Brown the Italian sausage over medium-high heat. Reduce heat to medium, add the cream and parmesan. Simmer until sauce is thickened, stirring frequently. Stir in arugula. Once arugula is slightly wilted, add pasta. Toss to combine and serve immediately. |
