    Blueberry Margaritas with blueberry simple syrup is the perfect choice to push your gathering up a knotch. Make a pitcher, these blueberry margaritas rock!

    Ingredients

    • 1 Cup Fresh blueberries (may use frozen as well)
    • 1 Cup Sugar
    • 1 Cup Water
    • 2 Ounces Fresh lime juice (Fresh is the best choice here)
    • 4 Ounces Tequila
    • ¼ Teaspoon Orange extract
    • Ice to fill 2 margarita glasses
    • Salt for rimming glasses (Kosher salt works pretty well!)

    Blueberry Margaritas for two...or one!

    Margaritas rock but these Blueberry Margaritas rock extra hard!  Take the extra step (less than 10 minutes) and make a blueberry simple syrup.  The color of these drinks yells "Celebration."  I usually pass on the salt rim for my margaritas but I'm telling you, the sale rim on these blueberry margaritas add so much to the flavor combinations.  Try it!  The inspiration for this recipe came from Food & Wine.  Their recipe called for orange bitters.  I didn't have any so I substituted orange extra.  Am I bad?  The drink is delicious so I think I did a good thing!

    Directions

    Step 1
    First make the blueberry simple syrup by combining blueberries, water and sugar in saucepan over medium heat.

    Heat until sugar is dissolved and then simmer for another 10 minutes or so. You want to capture all that delicious blueberry flavor!

    Allow to cool for about 10-15 minutes -- just so the syrup doesn't melt all your ice! Strain the blueberries from the syrup. (I like to press the blueberries gently to get all that blueberry flavor!)

    This will make enough simple syrup for several margaritas. You need only 2 ounces per drink.
    Step 2
    While syrup is cooling, sprinkle (maybe) ¼ cup kosher salt on a salad plate.

    Run a lime around the rim of each margarita glass and place the glass (rim side down!) into the salt. Spin the glass so that the entire rim is covered with salt.

    To make the margarita, fill the two salted margarita glasses with plenty of ice.

    In a pitcher or other container, combine 2 ounces lime juice, 4 ounces of tequila, 4 ounces of simple syrup and ¼ teaspoon orange extract. Stir.

    Pour into the salted glasses and enjoy!
