This tasty cauliflower "rice" is a perfect grain-free, vegan side dish. I love rice, but definitely do not feel I am missing out by substituting this dish!
Ingredients
- 1 head fresh cauliflower
- ⅓ cup olive oil
- ½ cup cilantro (minced)
- 4 Cloves garlic (minced)
- 2 limes (juiced)
Note
Make extra of this dish so you have some leftovers! It's great drizzled with a little soy sauce too!
Directions
Step 1 | |
Steam the cauliflower by placing it in a pot of boiling water until tender. (You may want to break the cauliflower into smaller pieces to allow it to fit into the pot easier.) Drain in colander. | |

In food processor equipped with grater insert, grate the cauliflower. You will see the grated cauliflower takes on the appearance of rice. You can also use a hand-held grater for this step. | |
Step 3 | |
Heat oil in saute pan over medium heat. Add garlic and allow to infuse oil for approximately 2 minutes. | |
Step 4 | |
Add cauliflower "rice" and lime juice to oil. Allow rice to sit without stirring for 3-5 minutes. Stir and allow to sit again for another 3-5 minutes. | |
Step 5 | |
Add chopped cilantro, salt and pepper to taste. Mix and serve. This is also really good with a little sprinkle of soy sauce over the rice! |
