Cinnamon Sugar Biscotti

Ingredients
- ¾ Cup vegetable oil
- 1 Cup sugar
- 3 Large eggs
- 1 Teaspoon vanilla extract
- 3 Cups flour
- 1 Teaspoon baking soda
- 1 teaspoon baking powder
- ½ Teaspoon salt
- 1 Cup walnuts or pecans (ground fine)
- ¼ Cup sugar
- 1 Teaspoon cinnamon
Directions
Step 1 | |
In large bowl, beat together oil and sugar. | |

Add eggs and vanilla. | |
Step 3 | |
In medium bowl, sift together flour, baking powder, baking soda and salt. Add nuts. | |

Add flour mixture to egg mixture and mix until incorporated. The dough will be heavy and sticky. | |
Step 5 | |
Wet your hands with water to prevent dough from sticking. Divide dough into thirds and role each into one-inch thin rolls. | |
Step 6 | |
Place rolls on lightly greased cookie sheets (I use Pam cooking spray). | |
Step 7 | |
Mix together sugar and cinnamon. Sprinkle on tops of rolls. | |
Step 8 | |
Bake at 350ºF for 30 minutes or until lightly browned. | |
Step 9 | |
Remove from oven. While still warm and on cookie sheet, slice rolls into ½ inch pieces. | |
Step 10 | |
Place slices cut side up on cooking sheet. Return to oven and bake another 5 minutes on each side. | |
Step 11 | |
Remove and cool on racks. |
