    Clementine Margarita

    Ingredients

    Thyme Simple Syrup

    • ¼ Cup water
    • ¼ Cup sugar
    • ½ Cup thyme sprigs

    Margarita

    • 8 Ounces fresh squeezed clementine juice (orange juice can be substituted, but I recommend clementine!)
    • 4 Ounces tequila
    • 2 Ounces thyme simple syrup (super easy -- recipe is included in directions)
    • kosher salt for rimming glasses
    • ice

    Note

    This Clementine Margarita was inspired by a recipe I found on Vinepair for a smokey orange-thyme margarita.  The thyme in the margarita got my attention, but I had to go with clementine instead of orange juice.

    Don't let the fact that you have to make simple syrup discourage you.  It's a very easy thing to make -- just takes a few extra minutes and this cocktail is totally worth it!

    Directions

    Make Thyme Simple Syrup
    Step 1
    Over medium high heat, combine ¼ cup sugar and ¼ cup water. Bring to a boil stirring frequently. Remove from heat and add about ½ cup of thyme sprigs. Give it a stir until the thyme is submerged. Allow to cool. Strain into container. This will make slightly more simple syrup than you need for 2 cocktails.
    Assemble Margarita
    Step 2
    Sprinkle a layer of salt on plate.
    Rub small piece of clementine around rim of glasses.
    Turn glasses upside down on plate to allow salt to adhere to the rim.
    Fill glasses with ice.

    In a small pitcher, combine 8 oz. juice, 4 oz. tequila, and 2 oz. simple syrup. Stir.
    Divide into glasses and Enjoy!
