    Kentucky Casserole

    Kentucky Casserole is a beautiful and delicious way to use up leftover chicken or turkey. Bake in individual sized ovenproof dishes or a 2 quart casserole.

    Ingredients

    • 8 Tablespoons (1 stick) unsalted butter
    • ⅓ Cup flour
    • 1-½ Cups milk
    • 1 Cup chicken broth
    • 2 Tablespoons dry sherry
    • ¾ Cup shredded cheddar
    • ½ Cup grated parmesan
    • 1 Small jar pimentos (drained)
    • 2 Teaspoons Tabasco
    • salt and pepper to taste
    • 3 Cups cubed, cooked turkey or chicken
    • 6 Slices tomato (about ¼ inch thick)
    • 6 Strips bacon (cooked)
    • 5-6 Cups cubed, hearty bread

    Note

    Any hearty bread can be used, but for an extra special taste treat, try cubed Texas Toast Garlic Bread!  This Kentucky Casserole is a beautiful, hearty and delicious way to use up leftover turkey or chicken.

    Directions

    Step 1
    Pre-heat oven to 400°F

    Spray 6 ovenproof dishes (or one 2-quart dish) with nonstick spray

    To make sauce:

    Melt butter in medium sauce pan over medium heat

    Whisk in flour and continue cooking for 2 minutes

    Whisk in milk, chicken broth and sherry

    Bring to a simmer and continue cooking for about 3 minutes or until sauce is thick

    Whisk in cheeses until smooth

    Remove from heat and add pimentos and Tabasco

    Season with salt and pepper
    Step 2
    In large bowl, toss cubed, toasted bread with 1 cup of the sauce

    Place toasted bread in bottom of dishes

    Divide cubed turkey or chicken among the 6 dishes

    Divide the sauce among the 6 dishes

    Bake for 20 minutes until heated through

    Top with sliced tomatoes and bacon
