Kentucky Casserole is a beautiful and delicious way to use up leftover chicken or turkey. Bake in individual sized ovenproof dishes or a 2 quart casserole.
Ingredients
- 8 Tablespoons (1 stick) unsalted butter
- ⅓ Cup flour
- 1-½ Cups milk
- 1 Cup chicken broth
- 2 Tablespoons dry sherry
- ¾ Cup shredded cheddar
- ½ Cup grated parmesan
- 1 Small jar pimentos (drained)
- 2 Teaspoons Tabasco
- salt and pepper to taste
- 3 Cups cubed, cooked turkey or chicken
- 6 Slices tomato (about ¼ inch thick)
- 6 Strips bacon (cooked)
- 5-6 Cups cubed, hearty bread
Note
Any hearty bread can be used, but for an extra special taste treat, try cubed Texas Toast Garlic Bread! This Kentucky Casserole is a beautiful, hearty and delicious way to use up leftover turkey or chicken.

Pre-heat oven to 400°F Spray 6 ovenproof dishes (or one 2-quart dish) with nonstick spray To make sauce: Melt butter in medium sauce pan over medium heat Whisk in flour and continue cooking for 2 minutes Whisk in milk, chicken broth and sherry Bring to a simmer and continue cooking for about 3 minutes or until sauce is thick Whisk in cheeses until smooth Remove from heat and add pimentos and Tabasco Season with salt and pepper | |

In large bowl, toss cubed, toasted bread with 1 cup of the sauce Place toasted bread in bottom of dishes Divide cubed turkey or chicken among the 6 dishes Divide the sauce among the 6 dishes Bake for 20 minutes until heated through Top with sliced tomatoes and bacon |
