These Stacked Roasted Potatoes with bacon and seasonings are a beautiful way to serve a basic side dish. Top with sour cream and/or salsa before serving for a completely different taste treat!
Ingredients
- 4 Medium baking potatoes (scrubbed and cut into ¼ inch slices)
- ¼ cup olive oil
- 1 Tablespoon rosemary (finely chopped)
- 2 Teaspoons garlic powder
- 1 Teaspoon paprika
- 1 Teaspoon salt
- 2 Teaspoons pepper
- 6 Slices bacon (cut into 1-inch pieces)
- 12 ¼ inch thick slices sharp cheddar (About 1)
Note
Sometimes simple is best! The Stacked Roasted Potatoes are about as simple as a side dish can get. I first tried these when our friend Laura shared them at a dinner party. Delicious! The bacon adds so much flavor, but you could substitute ham -- or even onion for a vegetarian spin. And for a completely different taste treat, spoon a little sour cream and/or salsa on top before serving. These versatile Stacked Roasted Potatoes are the perfect side dish! Enjoy!

In large mixing bowl, whisk together olive oil and seasonings (rosemary, garlic, paprika, salt and pepper). Place potato slices in bowl and toss to ensure they are well coated with oil and seasonings. | |

On parchment-lined baking sheet, stack potatoes in stacks of 3 or 4, placing a small piece of bacon between each slice. Bake in 400°F oven until potatoes are tender (about 45 minutes). Remove from oven and top each stack with a slice of cheese. Return to oven until cheese has melted (about 5 minutes). |
