    Strawberry Mango Salsa
    Serves 2 cups
    Prep time 10 minutes
    Meal type Appetizer, Condiment
    Strawberry mango salsa is very versatile -- use it on its own as a dip for tortilla chips, spoon over grilled chicken or baked brie, or use it with chopped greens as a substitute for salad dressing.

    Ingredients

    • 1 Cup diced fresh strawberries
    • 1 Cup diced fresh mango
    • 1 jalapeno, minced (seeds and ribs removed)
    • 2 Tablespoons minced red onion
    • 2 Tablespoons minced fresh parsley
    • 2 Tablespoons honey
    • juice of 1 lime

    Directions

    Step 1
    Add all ingredients to bowl.
    Toss to combine.
    Allow flavors to develop for 15-30 minutes.
    Step 2
    This salsa is best consumed the day it is made -- while the fruits are nice and firm.

    There are so many uses: it's delicious just as a salsa with tortilla chips, you can also spoon it over baked brie or grilled chicken. It would even be good mixed in with chopped greens -- no need for dressing!
