    Kentucky Casserole

    I'm here to tell you Kentucky Casserole is a great option!

    Kentucky Casserole - a beautiful, hearty and tasty way to use up leftover chicken or turkey. You gotta try this! | The Recipe Wench

     

    Chunks of hearty bread, sprinkled with pieces of chicken or turkey, followed by a creamy, cheesy sauce with tangy pimentos and spicy Tabasco.  Finally, this beauty is topped off with bacon and tomatoes.

    I can be prepared in individual-sized baking dishes, or in a larger ovenproof dish.

    If you have garlic butter Texas toast, that makes this casserole all the more tasty!

    Kentucky Casserole

    Prep time 15 minutes
    Cook time 20 minutes
    Total time 35 minutes

    Kentucky Casserole is a beautiful and delicious way to use up leftover chicken or turkey. Bake in individual sized ovenproof dishes or a 2 quart casserole.

    Ingredients

    • 8 Tablespoons (1 stick) unsalted butter
    • ⅓ Cup flour
    • 1-½ Cups milk
    • 1 Cup chicken broth
    • 2 Tablespoons dry sherry
    • ¾ Cup shredded cheddar
    • ½ Cup grated parmesan
    • 1 Small jar pimentos (drained)
    • 2 Teaspoons Tabasco
    • salt and pepper to taste
    • 3 Cups cubed, cooked turkey or chicken
    • 6 Slices tomato (about ¼ inch thick)
    • 6 Strips bacon (cooked)
    • 5-6 Cups cubed, hearty bread

    Note

    Any hearty bread can be used, but for an extra special taste treat, try cubed Texas Toast Garlic Bread!  This Kentucky Casserole is a beautiful, hearty and delicious way to use up leftover turkey or chicken.

    Directions

    Step 1
    Pre-heat oven to 400°F

    Spray 6 ovenproof dishes (or one 2-quart dish) with nonstick spray

    To make sauce:

    Melt butter in medium sauce pan over medium heat

    Whisk in flour and continue cooking for 2 minutes

    Whisk in milk, chicken broth and sherry

    Bring to a simmer and continue cooking for about 3 minutes or until sauce is thick

    Whisk in cheeses until smooth

    Remove from heat and add pimentos and Tabasco

    Season with salt and pepper
    Step 2
    In large bowl, toss cubed, toasted bread with 1 cup of the sauce

    Place toasted bread in bottom of dishes

    Divide cubed turkey or chicken among the 6 dishes

    Divide the sauce among the 6 dishes

    Bake for 20 minutes until heated through

    Top with sliced tomatoes and bacon
