Roast Beef Bruschetta - rub a little garlic on toast, maybe add some horseradish, cream cheese and BOOM! | The Recipe Wench

Roast Beef Bruschetta is one of those appetizers that is so delicious it’s hard to believe how simple it is to make!

I give you a recipe for the horseradish cream sauce (horseradish is awesome with roast beef), but honestly, these are delicious with just a little rub of garlic clove followed by a swipe of cream cheese on the toasted baguettes.

Top with roast beef and sprinkle with parsley — even chives would delicious!

I chose seeded baguettes for this appetizer.  The toasted seeds added a lot of flavor!

Roast Beef Bruschetta with Horseradish Cream Cheese

Roast Beef Bruschetta with Horseradish Cream Cheese
Serves 8
Prep time 15 minutes

Ingredients

  • 1/2 Lb. roast beef from deli (thinly sliced)
  • 8 Ounces cream cheese (softened)
  • 1 Tablespoon horseradish (slightly more or less to taste)
  • 2 baguettes (cut diagonally into 3/4 inch slices)
  • 1/2 Cup olive oil
  • garlic cloves (to rub on toasted baguettes)
  • parsley (for garnish)

Directions

Cream Cheese Sauce
Step 1
Cream together softened cream cheese and horseradish. Set aside.
Toast baguette slices
Step 2
Brush slices of bread with olive oil. Toast on hot grill. (Or you can place in 400°F oven until nicely browned -- approximately 3 minutes.)
Step 3
Rub each slice of toast with garlic clove, then top with about a teaspoon of sauce, 1/2 slice of roast beef and garnish with parsley
