What can I say?!
Roast Beef Bruschetta is one of those appetizers that is so delicious it's hard to believe how simple it is to make!
I give you a recipe for the horseradish cream sauce (horseradish is awesome with roast beef), but honestly, these are delicious with just a little rub of garlic clove followed by a swipe of cream cheese on the toasted baguettes.
Top with roast beef and sprinkle with parsley -- even chives would delicious!
I chose seeded baguettes for this appetizer. The toasted seeds added a lot of flavor!

Roast Beef Bruschetta with Horseradish Cream Cheese

Ingredients
- ½ Lb. roast beef from deli (thinly sliced)
- 8 Ounces cream cheese (softened)
- 1 Tablespoon horseradish (slightly more or less to taste)
- 2 baguettes (cut diagonally into ¾ inch slices)
- ½ Cup olive oil
- garlic cloves (to rub on toasted baguettes)
- parsley (for garnish)

Cream together softened cream cheese and horseradish. Set aside. | |
Toast baguette slices | |
Step 2 | |
Brush slices of bread with olive oil. Toast on hot grill. (Or you can place in 400°F oven until nicely browned -- approximately 3 minutes.) | |

Rub each slice of toast with garlic clove, then top with about a teaspoon of sauce, ½ slice of roast beef and garnish with parsley |
