    SUPER SANDWICH SUGGESTIONS

    [vc_row][vc_column width="1/1"][vc_column_text]Super Bowl XLIX is just days away.   Do you have your Super Bowl party menu locked down yet?  If not, I've got three party-worthy sandwich ideas for you!

    The first one is a Roast Pork Sandwich highlighted with an oil and vinegar based COLESLAW.[/vc_column_text][vc_single_image image="1951" border_color="grey" img_link_target="_self" img_size="full" alignment="center"][vc_column_text]To set this sandwich apart, serve it on Sweet Hawaiian Rolls.  Start with this SLOW ROASTED PORK SHOULDER recipe.

    When the pork is done, break it into chunks, put a healthy portion on the Hawaiian Roll, drizzle some of your favorite bottled barbeque sauce, and then top it with the COLESLAW.

    Warning:  If you are cooking this pork roast while your guests are present, be sure to have something for them to snack on, like  SPINACH DIP, JALAPENO DIP, ROAST BEEF AND HORSERADISH CREAM CHEESE TOASTS, ASIAN CHICKEN WINGS OR CLASSIC HOT WINGS because the fragrance coming out of your oven while the pork is roasting is amazingggg.

    The second is a Grilled Chicken Sandwich with bacon, mushrooms and a smokey chipotle mayo sauce.[/vc_column_text][vc_single_image image="1980" border_color="grey" img_link_target="_self" img_size="full" alignment="center"][vc_column_text]This sandwich came together one evening when I didn't really have anything planned for dinner (we've all been there, right???).  I used some leftover grilled chicken and leftover chipotle peppers.   We were really happy with it just like that, but Jeff wisely suggested the addition of bacon and mushrooms.  It is now one of our favorites!

    No "recipe" needed, but here's the play-by-play:

     

    • Grill your chicken breasts and slice.
    • Sauté mushrooms.
    • Fry bacon.
    • Make chipotle sauce by combining equal amounts of canned chipotle chiles and mayo.  (You can adjust ratios to suit your taste.)
    • On a roll of your choice, layer chicken, jack cheese, mushrooms and bacon.
    • Wrap in foil and heat in 350° oven for 15 minutes, or until cheese is melted.
    • Add lettuce and drizzle (or pour!) chipotle sauce.

     

    This sandwich would go really well paired with EVERYTHING POTATO SALAD.

    Last but not least is a burger our family lovingly refers to as the Aussie Burger because we were introduced to this monster by our one-of-a-kind Aussie friend, Natalie.[/vc_column_text][vc_single_image image="1941" border_color="grey" img_link_target="_self" img_size="full" alignment="center"][vc_column_text]This thing is piled high with onions, bacon, cheese and -- this is what sets it apart: fried egg and pickled beets.  Yes you read that correctly, my friends -- fried egg and pickled beets push this delicious burger OVER... THE...TOP...

    No side dish required.  This is a meal in itself!
