Toffee Diamonds

Our landlords, dressed in their finest, show up to our house once a month to collect rent.

Wanting to be gracious American hosts, we invite them to the table, offer them a drink.

They always want “just a little” Coke.

Jeff and I, armed with a glass of wine, then sit down to have a chat with them in Italian.

Oh dear!  The painful looks on their faces as they listen to us butcher their native language will haunt me for years!

To cut down on the need to talk, I like to keep them occupied by offering a little snack.

These Toffee Diamonds have saved us more than once!

Toffee Diamonds

These toffee cookies are rich, crunchy and delicious -- reminiscent of Heath Bars.

Ingredients

  • 1 Cup butter (unsalted)
  • 1 Cup dark brown sugar (packed)
  • 1/4 Teaspoon salt
  • 1 Teaspoon vanilla extract
  • 1 egg yolk
  • 1 Cup flour
  • 8 Ounces semisweet or milk chocolate chips

Directions

Step 1
Heat oven to 350ºF.
Step 2
Cream together all ingredients up through egg yolk. Add flour and mix just until blended. Spread dough on greased, shallow baking pan (approx. 10x15). Bake until deep golden color (15-20 minutes). Be careful not to burn!
Step 3
Remove from oven and immediately sprinkle chocolate chips. When they soften, spread evenly with spatula. Allow to cool completely before slicing.
