    Ingredients

    • 3 Tablespoons butter
    • 2 Cups matchstick cut yellow squash
    • 2 Cups matchstick cut zucchini
    • 2 Cups matchstick cut carrots
    • salt and pepper to taste

    Note

    For this vegetable medley, it's important to cut the vegetables so that they are uniform in size to ensure the vegetables reach the tender stage at the same time.

    Directions

    Step 1
    To cut vegetables into "matchsticks," first start by cutting ¼ inch diagonal slices.
    Step 2
    Then cut the diagonal slices into "matchsticks." Easy!
    Step 3
    Melt butter in skillet over medium high heat

    Add carrots and saute until just starting to get tender

    Add squash and zucchini

    Gently toss until tender and then remove from heat

    Season with salt and pepper

    A super simple and delicious side dish. Just a little salt and butter to enhance the natural flavors of the veggies | The Recipe Wench
