This chicken chili is going to warm you right up in the most delicious way!

Temps here in Idaho recently got down to -18 (-30 with wind chill).
Am I whining a little? Maybe. I'm originally from San Diego so . . . I’ve never experienced anything like these temperatures before!
I will tell you this chicken chili sure hit the spot.
We fed a big, hungry group and even had leftovers.
This would be a great recipe for Game Day.
I have to admit I cheated a little by using a roasted chicken from the grocery store.
The roasted chicken was a splurge. But under the circumstances (new baby, crowded apartment, lots of hungry and tired people), I’m forgiving myself.
In a “normal” situation, I would use the meat from baked, grilled or poached chicken breasts.
I was tempted to add some carrots to this but was shut down by Jeff. Boo!
I still think the addition of carrots would be really good.
I'm not sure I'd call it "chili," but it would be delicious.

Ingredients
- 4 ounces butter
- 1 large white onion (finely diced)
- 4 cloves garlic (minced)
- 1 red pepper (diced)
- 4-5 teaspoons ground cumin
- ½ cup flour
- 4 cups chicken broth
- 4 cups light cream (half and half)
- 4 cups cooked chicken (chopped)
- 2 cans Great Northern beans
- 1 can diced jalapenos (4 ounces)
- 1 can diced green chilis (4 ounces)
- 1 bag frozen corn (10 ounces)
- Salt and pepper to taste
- Cilantro (optional)
Instructions
- Melt butter in large pot over medium heat.
- Add onion, garlic, red pepper and cumin
- Saute for about 10 minutes
- Stir in flour and cook for another 2 minutes or so.
- Add broth, stir until incorporated with flour
- Mixture will start to thicken
- Bring to a simmer.
- Add half and half and chicken.
- Simmer about 5 minutes.
- Add beans, jalapenos, green chilis, frozen corn
- Season with salt and pepper.
- Garnish with cilantro, if desired.
