Cookies for Breakfast!
I've always called this a Fruit Tart, but maybe "Fruit Pizza" is a better description.
Whatever you want to call it -- it's a fun way to eat fresh fruit. The whole wheat cookie crust has a rich, nutty flavor. The cream cheese topping is the perfect way to highlight sweet fruit.
You could even make smaller, "individual-sized" fruit pizzas -- how cute would that be?!

Note
This fruit pizza has a hearty whole wheat cookie crust. I like to spread the cookie dough out pretty thin so that I end up with a firmer crust. Topped with a rich cream cheese filling and fresh fruit, this whole wheat fruit pizza makes a delicious breakfast or dessert.

Step 1 | |
In large bowl, beat sugar and butter until fluffy. Add milk, lemon peel, vanilla and egg. Mix until well combined. Mix in remaining ingredients until well blended. Wet hands with water or spray with non-stick cooking spray to keep dough from sticking to you. On a large baking sheet lined with parchment paper, flatten dough out into a circle shape as large as your baking sheet will allow. Bake at 350ºF until golden (approx. 15-20 minutes, depending on the thickness of your dough) Remove from oven, cool. Then top with cream cheese filling and sliced fresh fruits. | |
