    Fruit Pizza with Whole Wheat Base

    Fruit Pizza with Whole Wheat Base

    This Fruit Pizza has a wholesome whole wheat sugar cookie crust, topped with simple cream cheese filling and fresh fruits. Enjoy for breakfast or dessert!

    Ingredients

    Filling

    • 2 8 ounce packages cream cheese (room temperature)
    • ½ cup butter (room temperature)
    • 1-2 Cups powdered sugar
    • 2 Teaspoons vanilla extract

    Cookie base

    • 1 cup sugar
    • ½ cup butter (room temperature)
    • 2 Tablespoons milk
    • 1 Tablespoon grated lemon peel
    • 2 Teaspoons vanilla extract
    • 1 egg
    • 1-¾ cup whole wheat flour
    • 1 teaspoon baking powder
    • ½ teaspoon baking soda
    • ½ teaspoon salt
    • ½ teaspoon cinnamon

    Topping

    • 2 Cups Fresh fruit (such as strawberries, kiwi, grapes, bananas, berries)

    Note

    This fruit pizza has a hearty whole wheat cookie crust.  I like to spread the cookie dough out pretty thin so that I end up with a firmer crust.  Topped with a rich cream cheese filling and fresh fruit, this whole wheat fruit pizza makes a delicious breakfast or dessert.

    Directions

    Cookie Base
    Step 1
    In large bowl, beat sugar and butter until fluffy.
    Add milk, lemon peel, vanilla and egg. Mix until well combined.

    Mix in remaining ingredients until well blended.

    Wet hands with water or spray with non-stick cooking spray to keep dough from sticking to you.

    On a large baking sheet lined with parchment paper, flatten dough out into a circle shape as large as your baking sheet will allow.

    Bake at 350ºF until golden (approx. 15-20 minutes, depending on the thickness of your dough)

    Remove from oven, cool. Then top with cream cheese filling and sliced fresh fruits.

    Mix cream cheese, butter and vanilla at high speed until light and fluffy.

    Add milk and powdered sugar a little at a time until well blended.
