This orzo, cucumber and feta cheese salad gives a beautiful presentation and is a perfect side dish. Very easy and fast to put together. Add extra virgin olive oil just prior to serving. Delicious!
Ingredients
- 1 Cup orzo (cooked to al dente)
- 2 Medium cucumbers (peeled, seeded and diced)
- ½ Cup red peppers (diced)
- ½ Cup black olives (sliced)
- 1 Cup feta cheese (crumbled)
- 3 Tablespoons fresh flat leaf parsley (minced)
- salt and pepper to taste
- olive oil to taste

Toss all ingredients together. Adjust seasonings. Drizzle with olive oil just before serving. |
