I hope last week was good to you.
I had difficulty focusing my attention ... on anything ... last week.
The weather in Naples has been beautiful so I'm going to attribute my lack of attention to "Spring Fever" rather than on a lack of discipline!
Jeff and I have been busy gearing up for our Cinco de Mayo party, which will be held this year on Saturday, the 2nd of May -- "Dos de Mayo"!
I just completed a test run of carnitas today. Delicious! You can expect to see a recipe on the blog soon!
And, of course, we test margaritas perpetually ....
Last week, we posted two recipes (only two!). If you didn't get a chance to take a look, here ya go -- life is full of second chances!
First is Corn Chowder prepared in the crock-pot. This chowder is light but also filling and satisfying. Wonderful bold flavors!
We also shared Chocolate Chip Baklava -- definitely NOT light. Like the Corn Chowder, it is satisfying, but the Baklava is satisfying in a rich, decadent, fun, naughty way!
Just a little piece is all you need to satisfy that sweet tooth!
