Who doesn't love a one-skillet dinner?
Add a baked potato and simple side salad and dinner is done!
While the chicken and potatoes are baking, you have plenty of time to set the table, tidy up the kitchen and pour yourself a glass of wine.
I used chicken thighs for this recipe, but you could easily use boneless, skinless breasts. I would butterfly the breasts or even cut them completely in half crosswise.

This savory chicken skillet using bone-in thighs is budget-friendly and easy to make when you are short on time!
Ingredients
- 5-6 chicken thighs (bone in and with skin)
- salt and pepper to taste
- 2 Tablespoons butter (I use unsalted)
- 3 Cloves garlic (minced)
- 1 cup chicken broth
- ½ Teaspoon EACH thyme, oregano and basil
- 2 Tbls cornstarch (mix with about ¼ cup water)
- ½ cup sour cream (at room temperature)
- ½ Lbs mushrooms (either sliced thick or halved or quartered, depending on size of mushrooms and your preference)
