If you haven't already tried it, I will tell you roasted green beans and mushrooms are a great combination.
This side dish goes especially well with grilled meat – chicken, steak, fish.
But it’s also delicious heaped on top of a bowl of steamed rice and drizzled with a little soy.

Roasted Green Beans and Mushrooms

Ingredients
- 1 pound green beans, washed and trimmed
- 8 ounces mushrooms, cleaned and halved
- 2 tablespoons olive oil
- Salt (I prefer kosher)
Instructions
- Preheat oven to 400
- Place green beans and mushrooms in a large bowl
- Drizzle with olive oil and toss to make sure vegetables are well-coated
- Turn all out onto a baking pan large enough to hold the vegetables in a single layer
- Season with kosher salt
- Roast until green beans are tender (approx. 10 minutes)
