    Spinach Margarita - Healthy, Tasty and Beautiful!

    Today we bring you the Spinach Margarita.

    Hush!  I know what you're thinking -- spinach has no place in a margarita, right?  Think again.

    Open your mouth and ready your taste buds for something pretty darn delicious.

    Granted, I'm a person who isn't afraid to drink her vegetables.  I like green drinks.  And I love my Vitamix.  It's our first "power" blender.  I'm not necessarily saying it's the best blender in the world, but it's the only high power blender I've ever used, and I'm really happy with it.

    When I purchased the Vitamix a few years ago, the family was doubtful this $400+ appliance would see much action. I have proven them wrong.  Even Jackie verbally acknowledged the error in her thinking, which tells me I must have made a huge impression on her with my frequent use of the Vitamix.  If you are on the fence about whether to get one, I say do it.  (And, no, I'm not receiving any compensation for this recommendation!)  Give it a designated spot on your kitchen counter so it's easy to access.

    Let's get to the important stuff now.  The green in this margarita is a beautiful, deep, healthy green thanks to the spinach and the half a lime (peel and all).  That's one of the great things about this powerful blender -- no need to peel fruit (well, maybe bananas!).

    I started with a recipe I found on Blender Babes, but changed it quite a bit.  In my opinion, Blender Babes' recipe didn't have nearly enough tequila!  I also substituted orange and mandarin orange juice in place of the white grape juice.

    Spinach Margarita - Drink Your Spinach!

    Spinach Margarita - Drink Your Spinach!
    Serves 6
    Prep time 5 minutes

    Slightly adapted from recipe on Blender Babes

    Ingredients

    • 4-5 oranges, peeled (or 1 cup high quality low-pulp orange juice if you don't care for the)
    • 1 can mandarin oranges in light syrup (I used the 11 ounce can as well as the liquid)
    • ¼ cup triple sec (depending on how sweet the oranges are, you may need to decrease this)
    • ½ cup tequila (you could easily increase this to 1 cup)
    • ½ lime, including peel
    • 2 Generous handfuls baby spinach
    • 2 Cups ice (for blending)
    • ice to fill glasses

    Directions

    Step 1
    Throw everything, except ice, in the blender in the order listed.
    Blend on high until liquid is a consistent color -- and you cannot see bits of lime peel or spinach.
    Turn blender off. Add ice and continue blending until smooth.
    Pour into ice-filled margarita glasses.
