A Winter Cocktail
I was searching for an easy winter cocktail that could be made by the pitcher.
I wanted something “wintery,” and refreshing.
Through the magic of Pinterest, I came across Two Tarts’ Winter Sun Cocktail.
It was really tasty and had almost everything I was looking for.
I set out to up the rosemary factor.
By replacing the triple sec with rosemary simple syrup, I got just the flavor I was hoping for.
I also upped the “vodka factor” while I was at it . . .
To make this by the pitcher, I whipped out my trusty No. 2 pencil and did some math for 10 cocktails —
Vodka (2-1/2 cups); clementine juice (3-1/3 cups); lemon juice (5 ounces); Rosemary simple syrup (1-1/4 cup).

A Clementine Winter Cocktail

- 2 Ounces vodka
- 1/3 Cup fresh squeezed Clementine juice
- 1/2 Ounce fresh squeezed lemon juice
- 1 Ounce rosemary simple syrup (recipe follows)
- sugar and lemon zest (for garnishing the rim of the glass)
Fresh squeezed clementines and rosemary simple syrup in this winter cocktail will grab your attention in the most delicious way!
To make the rosemary simple syrup, heat 1 cup water to just under a boil. Pour into bowl along with a few sprigs rosemary (bruise first). Allow to steep for 10 minutes. Strain water back to the pot and add 1 cup sugar. Heat over medium heat, stirring continuously until sugar is dissolved. Allow to cool. This can be stored in fridge up to 1 week.
This simple syrup is also used in the Rosemary-Lemon Martini.

|First, prepare the rosemary simple syrup and allow to cool. |
Next, prepare the glasses by adding a few spoonfuls of sugar to a plate and then grating some lemon zest into it. Run a wedge of clementine or lemon around the rim of the glass and place the glass upside down onto the sugared plate. Twist the glass around until the rim is coated in sugar.
Resist the urge to wet the rim of the glass with water -- the citrus juice works much better at keeping the sugar on the rim!

Fill glass with ice.
Add vodka, clementine and lemon juices, and rosemary simple syrup.
Garnish with sprig of rosemary.
